Best recipe for red bean mochi

Ingredients

  • For skin wrapper:
    1. Glutinous flour: 110g
    2. Rice flour: 20g 
    3. Sugar: 45g 
    4. 1 tsp Cooking Oil 
    4. 1/2 cup of Water 
  • For red bean filling: 
    1. 150g Red bean
    2. 20g Sugar 
    3. 20g Coconut milk 
    4. Vanilla extract 

Instruction

  1. Mix well glutinous flour, rice flour, sugar, water and cooking oil in a large bowl.
  2.  Cover the bowl with plastic food wrap then microwave for 1 minute. Take it out for continuous mixing before microwaving for another 1 minute.
  3.  Use a spatula to mix the cooked dough before flattening it on the table (dusted with corn starch to prevent stickiness). Divide dough into 8 equal parts and shape it into a circle.
  4.  Wash red bean with water and leave it to soften the night before.
  5.  Cook red beans with coconut milk and add water until it covers the surface of the bean. Cook over low heat, and stir it evenly.
  6.  As the beans are soft, grind them together with vanilla, sugar and a pinch of salt. 
  7.  Mix the red bean paste well and then shape it into medium-sized balls to make the filling.
